Carnitas!

We are Mexican food lovers at my house. We make a mean taco, but last night we tried Carnitas. Flavorful, spicy and slightly sweet, these were a big hit!

Carnitas

1 onion, chopped 1-2 garlic cloves, chopped Jalapeno, chopped (optional) 1 t. Crushed red pepper 1 lb stew beef, cubed into 1 inch chunks 1 cup beef stock 1 pkt Splenda 1 Orange segment Salsa Tortillas Avocado, chopped Cilantro

Coat your skillet or Dutch oven with cooking spray and sauté onions, garlic and jalepeno until tender and add your beef. Season with salt and pepper and brown meat on all sides. Once browned add the red pepper, Splenda, orange and beef broth. Cover and reduce heat to a simmer for 1 ½ hours. Uncover and continue to simmer for 8 minutes or until most of the liquid has evaporated. Shred meat with 2 forks and serve on tortillas with salsa, avocado, and fresh cilantro.
